If you need a light and quick snack try this easy recipe for apple and cherries filo pastry pie.
My mom makes all kinds of pastry pies, however she usually adds sugar, oil and some other ingredients that don’t go well with my current eating plan. My sister has her own version of these filo pastry pies, however I tried to make it as easy and as quick as possible.
Filo pastry comes originally from Turkey and Greece. It is very common in Serbia and other Balkan countries. You can find different spelling for this pastry : fillo, phyllo or how we will call it here filo. But no matter how it is called you can make delicious meals with it, as it can be stuffed with cheese, meat, veggies or fruits. It is all up to your liking and preference.
Filo dough or filo sheets you can either buy in the stores or make your own. If you opt for homemade filo dough you have to know that it is not an easy process and requires some skill and time. Although home made filo dough is always so much better then the ready to use one.
INGREDIENTS YOU NEED FOR THIS APPLE AND CHERRIES FILO PASTRY PIE:
- filo dough or filo sheets – about 12 sheets
- 300g of frozen cherries
- 2-3 sweet apples (depending on the size of the apples)
- 1/2 cup of mineral water
- 1tbs of oil
- baking paper

Apple and Cherries Filling
You need to peel and grate the apples first. Then make sure your cherries don’t have any pits in them. If you buy frozen cherries, they are usually already cleaned. Add your frozen cherries to the bowl with apples. You can add sugar to this mixture. I don’t do it as I don’t eat sugar and I don’t like sweeteners. I like the sour taste of cherries and apples actually give enough sweetness to it. You can add some almonds, vanilla extract (my sister does this) or cinnamon to this mixture. It is all up to you.
Filling The Filo Dough
For three strudels like on the picture, you will need about 9-12 filo dough layers, depending on how thin they are. Mine were a bit thicker so I used 9. Mix 1/2 of mineral water with 1tbs of oil. You will use this to sprinkle it on the filo dough sheets. Each sheet should be sprinkled. Once you place 3-4 filo layers upon each other, you can add your apple and cherries filling. Roll the layers and put them in the dish you already prepared with baking paper. You should get three rolls like on the picture above. However you can make more than three just increase the amount of filo dough sheets, cherries and apples.
Once you roll it all up, put some more of that water/oil mixture over the roles. You can use a silicone brush to do so. I have seen some videos where they are putting butter on top so it gets a nice crust, but for me oil and water did the trick as well and it didn’t make my apple and cherries filo pastry pie greasy.
Baking your apple and cherries filo pastry pie
My oven was pre-heated to 200 degrees celsius, and when I added the pies I turned the fan on. You know the best how your oven works so you can adjust it to the best temperature. Pie should bake on a 170-200 degrees celsius. Check your pies occasionally, they should be golden brown when you are using regular filo dough. I was using buckwheat filo dough, so mine are a bit darker brown.
When your pies are baked, take them out and they are ready to serve. My mom usually covers her pies with a wet kitchen towel and let them sit for a few minutes before she cuts them. However if you want them more crispy you don’t have to do that.
That is it. You need about 30 to 40 minutes, with baking, to finish this easy recipe for apple and cherries filo pastry pie.
